Spicy Penyet Chicken (Ayam Penyet) | Indonesian Food Recipes

Ayam Penyet (Penyet Chicken) is a type of dish that will make your tongue feel like burning... It's so spicy that when you have the first bite, you will want some more of that spiciness.

Ingredient

  • 4 piece Chicken
  • 300ml water
  • 2 piece Salam Leaf
  • Oil to fry
  • 5 cloves Garlic
  • 1/2 tsp Coriander
  • 3 cm Ginger
  • 3 cm Galangal
  • 3 cloves Shallots
  • 1/2 tomato
  • 1 tsp shrimp paste
  • 2 tsp salt
  • 1 bunch Lemon Basil (kemangi)
  • 2 keylime

Ayam Bakar (Grilled Chicken) | Indonesian Food Recipes

Ayam bakar is a generic term to refer various kinds of Indonesian dish of charcoal-grilled chicken. Ayam bakar literally means "roasted chicken" in Indonesian.
In Java, the chicken is usually marinated with the mixture of kecap manis (sweet soy sauce) and coconut oil, applied with a brush during grilling. The bumbu spices mixture may vary among regions, but usually it consists of combination of ground shallot, garlic, chili pepper, coriander, tamarind juice, candlenut, turmeric, galangal and salt. In Java ayam bakar usually tastes rather sweet because the generous amount of sweet soy sauce either as marination or dipping sauce. While the ayam bakar of Minangkabau (Padang), Bali and Lombok, and most of Sumatra, usually more spicier and reddish in color because the generous amount of chili pepper, turmeric and other spices, and the absent of sweet soy sauce.

Sweet Soy Sauce Chicken | Indonesian Food Recipes

Chicken with kecap manis (Indonesian sweet soy sauce)! One of Indonesia’s all time favorite dishes. The spice paste is a mix of chili, ginger, shallot, garlic, and candlenut. The taste is distinctly Indonesian, and once reduced, the sauce gives a nice glossy glace to coat the chicken, and they are especially good eaten with steamed white rice.

Ingredient

  • 8 chicken legs (you can also use thighs and/or wings)
  • 3 cloves of garlic, chopped
  • 1 onion, chopped
  • 3 spring onions, chopped
  • 7 tbsp kecap manis/ sweet thick soy sauce
  • 1 tbsp sesame oil
  • some butter
  • 1 tsp white pepper
  • 1 tbsp low sodium soy sauce/kecap asin

Chicken Satay (Sate Ayam) | Indonesian Food Recipes

Satay is an Indonesian dish of marinated meat that has been skewered and grilled, served with a sauce. Chicken Satay is traditionally served with a peanut sauce, which is as popular as the dish itself. It is usually served as an appetizer or part of a larger meal, but in Indonesia it is common to see street vendors selling them as snacks.
